2 cups fresh broccoli florets (or thawed frozen broccoli)

1 cup shredded white cheddar cheese

½ cup milk (whole or low-fat)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

¼ teaspoon paprika (optional for added flavor)

¼ teaspoon crushed red pepper flakes (optional for a hint of heat)

2 tablespoons fresh parsley, chopped (for garnish)

Cook the Rice: In a medium saucepan, bring the vegetable broth or water to a rolling boil. Stir in the uncooked rice, cover the pot with a lid, and reduce the heat to low. Allow the rice to simmer for 18-20 minutes, or until it is tender and the liquid has been completely absorbed. After cooking, remove the saucepan from heat and let it sit covered for an additional 5 minutes. Fluff the rice gently with a fork before setting it aside.

    Prepare the Broccoli: While the rice is cooking, steam the broccoli florets in a separate pot for about 3-5 minutes. They should be tender yet retain their vibrant green color. For frozen broccoli, microwave it in a bowl with a tablespoon of water. Heat until warmed through, then drain any excess water before setting them aside.

      Sauté Aromatics: In a large skillet, heat the olive oil and butter over medium heat. Once melted, add the finely chopped onion and sauté for approximately 3-4 minutes until the onion becomes translucent. Next, mix in the minced garlic and cook for an additional minute, allowing the garlic to become fragrant.

        Combine Ingredients: Add the cooked rice to the skillet, mixing it in with the sautéed onions and garlic. Then, gently fold in the steamed broccoli, ensuring an even distribution of ingredients.
