Ingredients

4 tablespoons all-purpose flour

3 tablespoons granulated sugar

1/4 teaspoon baking powder

1/8 teaspoon baking soda

1/4 teaspoon pumpkin pie spice

1/4 teaspoon ground cinnamon

A pinch of salt

3 tablespoons canned pumpkin puree

3 tablespoons milk (or your choice of milk alternative)

2 tablespoons vegetable oil

1/4 teaspoon vanilla extract

Optional toppings: whipped cream, chocolate chips, or chopped nuts

Instructions

In a microwave-safe mug (preferably around 12 oz), carefully combine the all-purpose flour, granulated sugar, baking powder, baking soda, pumpkin pie spice, ground cinnamon, and a pinch of salt. Use a whisk or fork to blend the dry ingredients thoroughly, ensuring there are no clumps.

In a separate small bowl, whisk together the canned pumpkin puree, milk, vegetable oil, and vanilla extract until the mixture is smooth and creamy.

Gradually pour the wet ingredients into the mug containing the dry mixture. Stir gently with a fork or a small whisk until fully combined, making sure to scrape the bottom and sides of the mug to incorporate all ingredients without leaving any lumps.

For an extra layer of flavor and crunch, you can fold in some chocolate chips or chopped nuts into the batter at this stage.

Place the mug in the microwave and heat on high for 1 minute and 30 seconds. After this time, check the cake; if it appears undercooked, continue to microwave it in 10-15 second increments until it rises beautifully and is cooked through.

Once fully cooked, allow the mug cake to cool for 1 to 2 minutes. Top with your favorite garnishes such as a dollop of whipped cream, a sprinkle of extra pumpkin pie spice, or a drizzle of chocolate sauce. Enjoy your delightful creation straight from the mug!
