2 cups fresh basil leaves, packed

1/2 cup grated Parmesan cheese

1/2 cup extra virgin olive oil

1/3 cup pine nuts, lightly toasted

2 cloves garlic, minced

Salt and freshly ground black pepper, to taste

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1/2 cucumber, diced

1/4 cup balsamic glaze (optional, for drizzling)

Additional fresh basil leaves for garnish

Cook the Tortellini: In a large pot, bring salted water to a rolling boil. Add the tortellini and cook according to the package instructions, usually about 3-5 minutes. Once al dente, drain the tortellini and immediately rinse it under cold water to halt the cooking process. Set aside to cool completely.

    Prepare the Pesto: In a food processor, combine the fresh basil leaves, lightly toasted pine nuts, minced garlic, and grated Parmesan cheese. Pulse the mixture until finely chopped. With the processor running, gradually add the extra virgin olive oil in a steady stream until the pesto achieves a smooth consistency. Taste the pesto and then season with salt and freshly ground black pepper as needed.

      Mix the Salad Ingredients: In a large mixing bowl, add the cooled tortellini, halved cherry tomatoes, diced cucumber, and halved fresh mozzarella balls. Drizzle the prepared basil pesto over the salad ingredients. Toss gently but thoroughly to ensure everything is well coated with the pesto.
