Ingredients

2 ripe bananas

1/2 cup creamy peanut butter

1/4 cup chia seeds

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

A pinch of sea salt

1/2 cup chopped dark chocolate (optional, for dipping)

1/4 cup crushed peanuts (for garnish)

Instructions

Prepare the Bananas: Begin by peeling the bananas and slicing them into approximately 1/2-inch thick rounds. Set the banana slices aside on a plate or cutting board.

Make the Peanut Mixture: In a medium-sized mixing bowl, add the creamy peanut butter, chia seeds, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Using a spatula or a whisk, mix the ingredients thoroughly until the mixture is smooth and well combined.

Assemble the Clusters: Line a baking sheet with parchment paper to prevent sticking. Take one banana slice and with a small spoon, scoop and dollop a generous amount of the peanut mixture onto the center of each slice. Continue this process until all banana rounds are topped with the peanut mixture, forming little clusters.

Freeze the Clusters: Carefully place the baking sheet in the freezer. Allow the banana chia peanut clusters to freeze for about 2 hours, or until they are solid and firm to the touch.

Optional Chocolate Coating: If you choose to include the dark chocolate, melt it in a microwave-safe bowl. Heat the chocolate in 30-second intervals, stirring in between, until it is completely smooth and melted. Once the banana clusters are frozen, take each cluster and dip it halfway into the melted chocolate, allowing any excess to drip off before placing it back on the parchment-lined baking sheet.

Garnish and Freeze Again: While the chocolate is still warm, generously sprinkle crushed peanuts over the chocolate-dipped areas of the clusters for added texture and flavor. Return the baking sheet to the freezer and let the clusters set for an additional 30 minutes.

Serve: Once the clusters are fully frozen, transfer them to a sealed container for storage. Keep them in the freezer and enjoy these delicious, nutritious snacks directly from the freezer anytime you need a quick treat!
