Prep the Bananas: Begin by peeling the ripe bananas and slicing them into 1-inch thick rounds. Line a baking sheet with parchment paper and arrange the banana slices in a single layer. This helps keep them from sticking together.

    Add Peanut Butter: Take a small spoon or a piping bag and place about 1 teaspoon of peanut butter on top of half of the banana slices. Gently press the remaining banana slices on top to create little banana sandwiches.

      Freeze: Transfer the baking sheet with the banana sandwiches to the freezer. Let them freeze for at least 30 minutes, or until they become solid and firm.

        Prepare Chocolate Coating: While the banana sandwiches are freezing, prepare the chocolate coating. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave the mixture in 30-second intervals, stirring in between, until it is completely smooth and fully melted.
