2 ripe bananas, thoroughly mashed

1 cup coconut yogurt (choose dairy or non-dairy based on preference)

1 cup creamy canned coconut milk

2 tablespoons honey or maple syrup (adjust according to desired sweetness)

1 teaspoon pure vanilla extract

1/4 cup shredded coconut (unsweetened or sweetened based on your taste)

A pinch of salt

Optional: Fresh fruit pieces such as pineapple or berries for an exciting texture

Instructions
 

Prepare the Ingredients: Start by peeling the ripe bananas and placing them in a mixing bowl. Use a fork or potato masher to mash the bananas until they reach a smooth and creamy consistency.

    Mix the Base: Into the bowl with the mashed bananas, add the coconut yogurt, coconut milk, honey or maple syrup, vanilla extract, and a pinch of salt. Mix all the ingredients together using a whisk or spoon until the mixture is uniform and smooth.

      Incorporate Coconut: Carefully fold the shredded coconut into the banana mixture, ensuring it's well distributed throughout. If you want to add fresh fruit for an additional burst of flavor, toss it in at this stage and gently mix.

        Fill the Molds: Pour the coconut banana mixture into your popsicle molds, filling them almost to the top but leaving a small gap to allow for expansion as they freeze. If you don't have popsicle molds, small paper cups work well with wooden sticks.

          Insert Sticks: If you’re using popsicle molds, place the sticks in the center of each mold. For paper cups, after about 1-2 hours of freezing, once the mixture starts to set, carefully insert the sticks into the center of each cup.

            Freeze: Place the filled molds in the freezer and allow them to freeze completely for at least 6 hours, or until firm to the touch.

              Unmold and Serve: When you’re ready to enjoy your pops, run warm water over the outside of the molds or cups for a few seconds to help loosen them. Gently pull on the sticks to remove the pops.
