Ingredients

2 medium ripe pineapples

1 can (14 oz) of coconut cream

1 cup of coconut milk

1/4 cup of honey or maple syrup (adjust to your preferred sweetness)

1 teaspoon of pure vanilla extract

1/2 teaspoon of sea salt

Fresh mint leaves for garnish (optional)

Toasted coconut flakes for topping (optional)

Instructions

Prepare the Pineapples: Begin by slicing off the tops of the pineapples. With a sharp knife, carefully cut around the inside edge of each pineapple, detaching the golden flesh from the skin to create hollow cups. Reserve the extracted pineapple flesh, and flip the hollow cups upside down to let any excess juice drain out.

Make the Coconut Mixture: In a mixing bowl, combine the coconut cream, coconut milk, honey (or maple syrup), vanilla extract, and sea salt. Using a whisk, mix until the blend is smooth and creamy, ensuring all ingredients are well incorporated.

Blend the Pineapple Flesh: Dice the reserved pineapple flesh into smaller chunks and transfer them to a blender. Blend until smooth, though you can retain some small pieces if you prefer a bit of texture in your dessert.

Combine Ingredients: Gently fold the blended pineapple into the coconut mixture, ensuring they are well combined for a delightful balance of flavors.

Fill the Cups: Carefully pour the coconut-pineapple mixture into the prepared hollow pineapple cups, filling them generously to the brim.

Freeze: Arrange the filled pineapple cups in a freezer-safe container. Place them in the freezer for a minimum of 4 hours or until the mixture is completely set.

Serve: After the cups have frozen, take them out of the freezer. If you like, you can use a fork to scrape the top layers to create a slushy effect. Garnish with fresh mint leaves and a sprinkle of toasted coconut flakes for a touch of elegance.

Enjoy: Slice the frozen coconut pineapple cups into wedges and invite everyone to delight in this refreshing tropical treat!
