Ingredients

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

1 can (14 oz) sweetened condensed milk

1 cup freshly squeezed lemon juice (approximately 4-5 lemons)

Zest of 2 lemons

1 cup Cool Whip, thawed

Lemon slices and fresh mint leaves for garnish (optional)

Instructions

Prepare the Crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix thoroughly until the ingredients form a crumbly texture. Press this mixture firmly into the bottom of a parchment-lined 8x8 inch baking dish, making sure it is compact and evenly distributed. Bake in the preheated oven for 8-10 minutes or until the crust is lightly golden. Once done, remove from the oven and allow it to cool completely.

Make the Filling: In a large mixing bowl, pour in the sweetened condensed milk, and then add the freshly squeezed lemon juice and lemon zest. Whisk the mixture vigorously until it is smooth and all ingredients are fully combined.

Fold in the Cool Whip: Gently add the thawed Cool Whip to the lemon mixture. Use a spatula to fold the Cool Whip in carefully, ensuring no streaks remain. Take care not to deflate the mixture to keep it light and airy.

Combine the Layers: Pour the lemon filling evenly over the cooled graham cracker crust. Use a spatula to smooth the top, creating an even surface.

Freeze the Pie Bars: Cover the baking dish with plastic wrap or a lid. Place it in the freezer and let it set for at least 4 hours, or until completely firm—overnight is ideal for the best texture.

Cut into Bars: After the pie bars are set, remove them from the freezer. Allow them to sit at room temperature for about 5-10 minutes to soften slightly, which will make slicing easier. Cut into bars of your desired size.

Serve and Garnish: Serve the lemonade pie bars chilled. For an extra pop of freshness and color, optionally garnish each bar with lemon slices and fresh mint leaves before serving.
