Ingredients

1 cup fresh orange juice (approximately 4-5 medium oranges)

1/2 cup full-fat coconut milk

1/2 cup Greek yogurt (or a dairy-free alternative)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon pure vanilla extract

1 tablespoon orange zest (from one orange)

A pinch of sea salt

Instructions

Juice and Zest the Oranges: Start by thoroughly washing and then juicing your oranges until you have about 1 cup of fresh orange juice. Set aside the juice. Next, using a microplane or zester, zest one of the oranges to gather approximately one tablespoon of zest for added flavor.

Combine Ingredients: In a medium mixing bowl, pour in the fresh orange juice, full-fat coconut milk, Greek yogurt, honey or maple syrup, vanilla extract, orange zest, and a pinch of sea salt. Use a whisk or spatula to thoroughly mix all ingredients together until the mixture is smooth and well-combined.

Taste and Adjust Sweetness: Before moving on, taste the mixture to see if the sweetness suits your preference. Feel free to add more honey or maple syrup if you enjoy a sweeter treat. Stir well after adjusting.

Fill the Cups: Carefully pour the mixture into small cups or popsicle molds, filling them about ¾ of the way full to allow for expansion as they freeze.

Insert Sticks (if using molds): If you're working with popsicle molds, place the sticks into the center of each cup. If using regular cups, you can either freeze them without sticks or cover with foil, then insert the sticks once they have started to freeze (about 1-2 hours in).

Freeze the Mixture: Transfer the filled cups or molds to the freezer, ensuring they are level. Freeze for a minimum of 4-6 hours, or until completely solid.

Serve with Ease: When ready to serve, take the cups out of the freezer and let them sit at room temperature for a couple of minutes to soften slightly. If using molds, run warm water over the outside to help release the creamsicles easily.

Enjoy the Refreshing Treat: Once the cups are out, enjoy your Frozen Orange Creamsicle Cups as a delightful dessert or a refreshing snack on a warm day!
