Ingredients

2 cups Greek yogurt (choose plain or vanilla based on preference)

1 cup strawberries, hulled and chopped into small pieces

2 ripe bananas, sliced into thin rounds

2 tablespoons honey or maple syrup (optional, adjust for desired sweetness)

1/4 cup granola (for a delightful crunch)

1/4 cup mini dark chocolate chips (optional, for an added chocolatey touch)

Fresh mint leaves (optional, for garnish)

Instructions

Prep the baking dish: Start by lining a baking sheet (approximately 9x13 inches) with parchment paper, ensuring some overhang on the sides. This will make it easier to lift out the frozen bark later.

Mix the yogurt: In a medium-sized mixing bowl, combine the Greek yogurt with honey or maple syrup. Stir thoroughly until the mixture is smooth and well combined. Taste the mixture and add more sweetener if preferred.

Incorporate the fruits: Gently fold in the chopped strawberries and banana slices into the yogurt mixture. Ensure that the fruits are evenly distributed throughout the yogurt for balanced flavor in each bite.

Spread the mixture: Pour the yogurt and fruit mixture onto the lined baking sheet. Use a spatula to spread it out evenly, aiming for a thickness of about 1/2 inch.

Top with granola: Evenly sprinkle the granola over the yogurt layer. Press it down slightly into the yogurt to help it adhere once frozen.

Add chocolate chips (optional): If desired, scatter the mini dark chocolate chips evenly across the top for a sweet and rich addition.

Freeze: Place the baking sheet in the freezer. Allow it to freeze for about 4-6 hours, or until completely solid.

Cut and serve: Once frozen, take the baking sheet from the freezer. Use the overhanging parchment paper to lift the bark out and onto a cutting board. With a sharp knife, cut into desired shapes or break into bite-sized chunks.

Garnish (optional): Before serving, add fresh mint leaves on top for a refreshing and vibrant touch.

Enjoy: Serve immediately for the best experience, or store the bark in an airtight container in the freezer, where it will stay fresh for up to 2 weeks.
