2 cups plain Greek yogurt

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup finely grated carrots (approximately 2 medium-sized carrots)

1/2 cup crushed pineapple, thoroughly drained

1/2 cup chopped walnuts or pecans

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup rolled oats

1/4 cup raisins (optional for added sweetness)

1/4 cup cream cheese, softened (for swirling)

Instructions
 

Make the Yogurt Base: In a large mixing bowl, add the Greek yogurt, honey (or maple syrup), and vanilla extract. Use a whisk to combine the ingredients until they are smooth and well-integrated.

    Incorporate the Carrot Cake Flavors: Add the finely grated carrots, drained crushed pineapple, chopped walnuts or pecans, ground cinnamon, ground nutmeg, and salt to the yogurt mixture. Stir gently until all of the ingredients are thoroughly mixed.

      Add Texture with Oats and Raisins: Gently fold in the rolled oats and raisins (if using). This addition will enhance the texture and infuse more flavor into the frozen yogurt.

        Prepare the Cream Cheese Swirl: In a separate small bowl, beat the softened cream cheese with a fork or a hand mixer until smooth. If desired, mix in a teaspoon of honey to sweeten it slightly. Set this mixture aside for swirling into the frozen yogurt later.

          Layer and Swirl: In a freezer-safe container, pour half of the yogurt-carrot cake mixture into the bottom.
