Ingredients

2 cups Greek yogurt (choose plain or your favorite flavored variety)

1/3 cup honey or maple syrup (to sweeten, adjust to taste)

1 tsp vanilla extract (for added flavor)

1 ½ cups granola (any flavor you prefer)

1 cup mixed nuts (such as almonds, walnuts, and pecans), roughly chopped

1 cup dried fruits (options include cranberries, apricots, or raisins)

1 cup mini dark chocolate chips or yogurt-covered raisins (for a sweet touch)

Cooking spray or parchment paper (for easy removal)

Instructions

Prepare the Yogurt Base: In a large mixing bowl, blend together the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and creamy. Taste and adjust the sweetness if necessary.

Line the Baking Tray: Take a baking tray or cookie sheet and line it with parchment paper for easy removal. Alternatively, lightly spray the tray with cooking spray to prevent the yogurt coins from sticking.

Create the Coins: Using a tablespoon, scoop out dollops of the yogurt mixture and place them onto the lined tray, forming round shapes about an inch in diameter. Ensure there is enough space between each dollop as they may slightly spread while freezing.

Top with Trail Mix: In a separate bowl, mix together the granola, chopped mixed nuts, dried fruits, and mini chocolate chips (or yogurt-covered raisins). Generously sprinkle this trail mix over each yogurt coin, pressing down gently to help it stick to the yogurt base.

Freeze: Transfer the tray to the freezer and allow the yogurt coins to freeze for a minimum of 4 hours or until they are completely solid.

Serve: Once frozen, carefully remove the yogurt coins from the tray by peeling them off the parchment paper. Enjoy them right away or store any extras in an airtight container in the freezer, where they will keep for up to 2 weeks.

Optional Chocolate Drizzle: For an indulgent twist, melt some dark chocolate in a microwave-safe bowl or over a double boiler, then drizzle the melted chocolate over the frozen coins after they have been removed from the tray. This will add a deliciously rich layer to your treats.
