Ingredients

For the Yogurt Layer:

2 cups plain full-fat Greek yogurt

1/2 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon pure vanilla extract

Pinch of sea salt

For the Toffee Layer:

1 cup unsalted butter

1 cup packed brown sugar

1 tablespoon water

1 teaspoon pure vanilla extract

1 cup chopped toffee bits (such as Heath bar or Skor)

For the Chocolate Topping:

1 cup semi-sweet chocolate chips

2 tablespoons coconut oil (or unsalted butter)

Instructions

Prepare the Yogurt Layer: In a large mixing bowl, whisk together the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt until the mixture is smooth and creamy.

Spread the Yogurt Mixture: Line a 9x9 inch (or similar) baking dish with parchment paper, ensuring there’s an overhang for easy removal later. Pour the yogurt mixture into the lined dish, smoothing it out into an even layer. Place the dish in the freezer and allow it to set for approximately 1 to 2 hours, or until firm to the touch.

Make the Toffee Layer: In a medium saucepan over medium heat, add the unsalted butter, packed brown sugar, and water. Stir the mixture constantly until it reaches a rolling boil. Once boiled, slightly reduce the heat and maintain a gentle boil for about 4 to 5 minutes, stirring constantly to prevent scorching. After thickening, remove from heat and stir in the vanilla extract and chopped toffee bits until well combined.

Add the Toffee Layer: Carefully take the yogurt layer out of the freezer once it’s firm. Pour the hot toffee mixture over the frozen yogurt layer, ensuring an even spread. Return the dish to the freezer for 30 minutes to allow the toffee layer to harden.

Prepare the Chocolate Topping: In a small microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until the chocolate is completely melted and smooth. Let it cool for a few minutes.

Top with Chocolate: Once the toffee layer is set, pour the melted chocolate over the toffee layer. Use a spatula to spread it evenly across the top. Return the dish to the freezer for an additional 20 to 30 minutes to let the chocolate firm up.

Slice and Serve: When ready to enjoy, carefully lift the frozen bars from the dish using the parchment paper overhang. Allow them to thaw for a couple of minutes at room temperature, then slice into bars of your desired size. Delight in your indulgent Choco-Toffee Bliss Bars!
