For the Muffin Bites:

1 cup all-purpose flour

1/2 cup rolled oats

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/3 cup honey or maple syrup

1/2 cup vanilla yogurt (Greek or regular)

1/4 cup unsweetened applesauce

1 large egg

1 teaspoon vanilla extract

For the Cinnamon Swirl:

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1 tablespoon melted coconut oil or butter

For Freezing:

1 cup of your favorite frozen yogurt

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a mini muffin tin by lining it with paper liners or lightly greasing each cup with cooking spray to ensure easy removal of the muffin bites.

    Mix Dry Ingredients: In a medium bowl, combine the all-purpose flour, rolled oats, baking powder, baking soda, ground cinnamon, and salt. Whisk these ingredients together until they are well mixed, then set the bowl aside.

      Combine Wet Ingredients: In a large mixing bowl, use a whisk to blend together the honey (or maple syrup), vanilla yogurt, unsweetened applesauce, large egg, and vanilla extract until the mixture is smooth and fully integrated.

        Combine Mixtures: Slowly fold the dry ingredient mixture into the wet ingredients using a spatula or wooden spoon. Mix until just combined; it’s perfectly fine to have a few lumps remaining, as over-mixing can result in dense muffins.

          Prepare Cinnamon Swirl: In a small bowl, combine the brown sugar, ground cinnamon, and melted coconut oil (or butter). Stir until the mixture is crumbly and well blended.

            Fill Muffin Tins: Using a tablespoon, scoop a dollop of the muffin batter into the bottom of each mini muffin cup. Sprinkle a small pinch of the cinnamon swirl mixture over the batter. Follow this with another scoop of muffin batter on top, then add another sprinkle of the cinnamon swirl mixture. With a toothpick, gently swirl the cinnamon mixture into the muffins for a decorative pattern.

              Bake Muffin Bites: Place the muffin tin in your preheated oven and bake for 10-12 minutes, or until a toothpick inserted into the center of a muffin bite comes out clean.

                Cool Down: Once baked, remove the muffin bites from the oven and let them cool in the pan for about 5 minutes. Carefully transfer them to a wire rack to cool completely.

                  Freeze with Yogurt: After the muffin bites have cooled, take a spoonful of frozen yogurt and press it gently into the center of each muffin bite. The muffins should be cool enough that the yogurt maintains its shape.

                    Freeze the Muffin Bites: Return the filled muffin bites to the freezer and allow them to freeze for approximately 1-2 hours, or until the yogurt is completely set and firm.

                      Serve: Once frozen, take the muffin bites out of the freezer and let them sit for a couple of minutes. Enjoy this delightful, creamy, and refreshing treat!
