2 ripe mangoes, peeled and diced

1 cup plain Greek yogurt

1/2 cup canned coconut milk (for rich creaminess)

2 tablespoons honey or maple syrup (adjust for desired sweetness)

1 teaspoon ground cardamom

1 teaspoon vanilla extract

A pinch of salt

1 tablespoon freshly squeezed lime juice

Fresh mint leaves for garnish (optional)

Instructions
 

Start by preparing your mangoes. Peel and dice them into small, manageable pieces.

    In a blender, combine the diced mangoes, plain Greek yogurt, canned coconut milk, honey (or maple syrup), ground cardamom, vanilla extract, a pinch of salt, and lime juice.

      Blend the mixture on high speed until it reaches a smooth and creamy consistency. Taste the blend and adjust the sweetness by adding more honey or maple syrup if desired.

        Once your mixture is smooth, carefully pour it into silicone ice cube trays or mini muffin tins, filling each compartment approximately three-quarters full to allow for expansion during freezing.

          For a burst of flavor, you can top each portion with small pieces of additional diced mango before freezing.

            Place the filled trays in the freezer and allow them to set for about 4-6 hours, or until they are completely frozen solid.

              When ready to serve, gently remove the frozen yogurt bites from the trays. If they resist, let them sit at room temperature for a minute, or run warm water over the outside of the trays to facilitate easy release.
