Ingredients

2 cups plain Greek yogurt

1 tablespoon matcha green tea powder

2 tablespoons honey (or maple syrup for a vegan alternative)

1 teaspoon vanilla extract

1 cup mixed berries (such as blueberries, raspberries, and chopped strawberries)

1/4 cup granola (optional, for an added crunch)

Silicone mini muffin tins or ice cube trays

Instructions

Mix the Base: In a medium mixing bowl, add the Greek yogurt along with the matcha powder, honey (or maple syrup), and vanilla extract. Whisk these ingredients together vigorously until the mixture is smooth and evenly green, ensuring there are no lumps from the matcha powder.

Add the Berries: Next, gently fold in the mixed berries with a spatula. Be careful not to mash them; you want them to remain whole for a delightful burst of flavor in each bite. If you are incorporating granola, set it aside for the topping.

Fill the Molds: Using a spoon, carefully fill each compartment of your silicone mini muffin tins or ice cube trays with the yogurt-berry mixture. Aim to fill each section about 3/4 full, allowing some space for the mixture to expand as it freezes.

Top It Off: If you opted for granola, now sprinkle a small amount over each filled compartment for a delightful crunchy topping that contrasts pleasantly with the creamy yogurt.

Freeze: Transfer the filled molds to the freezer. Allow them to freeze for at least 4 hours, or until they are completely solidified.

Unmold and Serve: Once fully frozen, carefully remove the yogurt bites from the molds. If you're using silicone molds, you can briefly run them under warm water to loosen the bites, making them easier to pop out.

Enjoy!: Serve these delightful frozen yogurt bites immediately for a refreshing treat, or store any leftovers in an airtight container in the freezer for up to 2 weeks.
