1 ½ cups graham cracker crumbs

1 cup ripe peaches, peeled and diced (you can use fresh or frozen peaches that have been thawed)

¼ cup honey or maple syrup (feel free to adjust to your preferred sweetness)

1 tsp vanilla extract

1 tsp lemon juice (to brighten the flavors)

For the topping:

½ cup diced peaches (for extra freshness)

¼ cup crushed graham crackers (for a delightful crunch)

Fresh mint leaves for garnish (optional, but adds a lovely touch)

Prepare the crust: In a medium mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the mixture is uniform and resembles wet sand. Firmly press this mixture into the bottom of an 8x8 inch (or similarly sized) baking dish to form an even layer. Once done, place the dish in the refrigerator to chill while you prepare the filling.

    Make the filling: In a large mixing bowl, combine the creamy vanilla yogurt, diced peaches, and your choice of sweetener (honey or maple syrup). Add the vanilla extract and lemon juice. Gently fold all the ingredients together until they are blended, being careful not to over-mash the peaches to maintain some chunky pieces.
