Frozen Yogurt Strawberry Lemonade Cups

2 cups fresh strawberries, hulled and sliced

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1/2 cup freshly squeezed lemon juice (approximately 4 medium-sized lemons)

1 tablespoon lemon zest (preferably from the same lemons used for juice)

1 cup plain Greek yogurt (or your choice of dairy-free yogurt alternative)

1 teaspoon vanilla extract

Pinch of salt

Prepare the Strawberries: In a medium-sized mixing bowl, combine the sliced strawberries with the honey or maple syrup. Gently toss the strawberries to ensure they are well coated with the sweetener. Allow the mixture to rest for about 10-15 minutes at room temperature. This will help the strawberries soften and release their natural juices, creating a flavorful syrup.

    Blend the Ingredients: Using a blender or food processor, add the macerated strawberries (along with their juices), the freshly squeezed lemon juice, lemon zest, plain Greek yogurt, vanilla extract, and a pinch of salt. Blend on high speed until the mixture is smooth and creamy. Taste the blend and adjust the sweetness by adding more honey or maple syrup if necessary.

      Fill the Cups: Carefully divide the creamy mixture evenly among silicone muffin cups or small plastic cups. To ensure there are no air bubbles trapped in the mixture, tap the cups gently on the counter.

        Freeze: Transfer the filled cups to the freezer and allow them to freeze for at least 4-6 hours, or until they are completely solid. If you need a quicker freezing option, you can spread the mixture into a flat container, which will freeze faster.
