Frozen Yogurt Strawberry Oat Pops

Ingredients
  

2 cups fresh strawberries, hulled and chopped

1 cup plain Greek yogurt (substitute with dairy-free yogurt if preferred)

1/4 cup honey or maple syrup (adjust to taste for sweetness)

1/2 teaspoon pure vanilla extract

1 cup rolled oats

1/2 cup granola (optional, for an added crunch)

Pinch of salt

Instructions
 

Prepare the Strawberries: In a medium bowl, add the chopped strawberries. Using a fork, gently mash them, leaving some pieces intact for added texture. Set the bowl aside.

    Mix the Yogurt: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir well with a whisk or spatula until the mixture is creamy and smooth.

      Incorporate the Oats: Gradually fold the rolled oats into the yogurt mixture. Use a spatula to ensure that the oats are evenly combined without overmixing.

        Combine the Mixtures: Gently add the mashed strawberries to the yogurt and oat mixture. Stir until everything is fully mixed, making sure the strawberry pieces are dispersed throughout the mixture.

          Fill the Molds: Spoon the mixture into popsicle molds, filling each mold about three-quarters full. If using granola, sprinkle a layer on top of each mold for a delightful crunch. Insert popsicle sticks into each mold.

            Freeze the Pops: Place the filled molds in the freezer for at least 4-6 hours, or until the pops are completely frozen.

              Serve Your Treats: To easily release the pops, run warm water over the outside of the molds for a few seconds. Gently tug the pops out and delight in your refreshing strawberry yogurt pops!
