1 pound large shrimp, peeled and deveined

1 cup quinoa, rinsed thoroughly

2 cups vegetable or chicken broth

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon paprika

Zest of 1 lemon and juice of the same lemon

1 tablespoon fresh parsley, chopped (plus extra for garnish)

Salt and freshly ground black pepper to taste

Optional: Red pepper flakes for an extra kick

Cook the Quinoa: In a medium saucepan, bring 2 cups of vegetable or chicken broth to a rolling boil. Once boiling, add the rinsed quinoa. Reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes or until all the liquid has been absorbed. After cooking, remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes. Finally, use a fork to fluff the quinoa gently.

    Prepare the Shrimp: While the quinoa cooks, heat a large skillet over medium heat. Add 2 tablespoons of unsalted butter to the skillet. Once the butter has melted and starts to bubble, add the minced garlic. Sauté the garlic for approximately 1 minute, or until it becomes aromatic and golden, being careful not to let it burn.

      Cook the Shrimp: Add the peeled and deveined shrimp to the skillet. Season the shrimp with paprika, lemon zest, salt, and pepper.
