12 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

½ cup vegetable broth or chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups fresh spinach, packed

2 tablespoons fresh parsley, chopped (for garnish)

Zest of 1 lemon

Juice of ½ lemon

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package directions until al dente, usually around 8-10 minutes. Before draining, reserve 1 cup of the pasta water for later. Drain the pasta and set aside.

    Sauté the Shrimp: Heat 2 tablespoons of butter in a large skillet over medium heat. Once the butter is melted and bubbling, add the minced garlic and red pepper flakes. Sauté for about 30 seconds, until the garlic is fragrant but not browned. Season the shrimp with salt and pepper, then add them to the skillet. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque. Once cooked, remove the shrimp from the skillet and set aside on a plate.

      Make the Cream Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Allow it to melt, then pour in the vegetable or chicken broth, using a wooden spoon to scrape any flavorful bits stuck to the bottom of the pan. Stir in the heavy cream and bring the mixture to a gentle simmer.
