Ingredients

2 large zucchinis, sliced into ½-inch thick rounds

2 bell peppers (one red and one yellow), cut into thin strips

1 large red onion, cut into medium wedges

1 cup cherry tomatoes, left whole

4 cloves of garlic, finely minced

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and freshly ground black pepper, to taste

Fresh parsley, finely chopped (for garnish)

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the sliced zucchinis, bell peppers, onion wedges, and whole cherry tomatoes. Make sure the vegetables are cut uniformly for even grilling.

Make the Marinade: In a separate, smaller bowl, whisk together the minced garlic, extra virgin olive oil, balsamic vinegar, dried oregano, dried thyme, dried basil, red pepper flakes (if using), and a generous pinch of salt and freshly ground black pepper. The marinade should be well blended for an even flavor.

Marinate the Vegetables: Pour the marinade over the mixed vegetables in the large bowl. Toss gently but thoroughly to ensure each piece is well coated in the marinade. Cover and let them marinate for at least 30 minutes to allow the flavors to meld, or let it sit for up to 2 hours for a more intense flavor profile.

Preheat the Grill: Preheat your grill to medium-high heat. If using a grill basket, place it on the grill to heat up as well.

Grill the Vegetables: Transfer the marinated vegetables to the grill basket and place it on the grill. Grill for about 10-15 minutes, turning occasionally, until the vegetables are tender and exhibit beautiful grill marks. If you prefer grilling directly on the grill, thread the marinated vegetables onto skewers and grill them, turning often, until they are cooked through and slightly charred.

Final Touches: Once the vegetables are perfectly grilled, remove them from the grill and arrange them on a vibrant serving platter. Finish with a sprinkle of finely chopped fresh parsley and an additional drizzle of olive oil if desired for extra richness.

Serve: Relish your Garlic Herb Grilled Vegetables while they are warm! They make for a fantastic side dish or can be tossed into a fresh salad or grain bowl, adding a splash of color and flavor to your meal.
