Ingredients

4 large ears of fresh sweet corn, husked and cleaned

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and black pepper, to taste

1 tablespoon fresh lime juice

1 tablespoon chopped fresh cilantro

1 tablespoon chopped fresh basil

8 small corn tortillas

1 ripe avocado, sliced

1 cup crumbled feta cheese (optional, for garnish)

Lime wedges, for serving

Instructions

Preheat the Oven: Set your oven to 400°F (200°C) to preheat while you prepare the corn. This ensures it reaches the right temperature for roasting.

Prepare the Corn: Remove the husks and silk from the sweet corn. Arrange the ears of corn on a large baking sheet. Using a pastry brush, coat each corn ear generously with olive oil for a rich flavor.

Season the Corn: In a small bowl, combine the minced garlic, smoked paprika, ground cumin, and a pinch of salt and black pepper. Mix thoroughly. Rub this flavorful garlic herb blend evenly over each ear of corn, ensuring every kernel is coated.

Roast the Corn: Place the baking sheet in the preheated oven. Roast the corn for approximately 20 to 25 minutes, turning once halfway through the cooking time. The corn should be tender with slightly caramelized kernels.

Cut the Kernels: Once roasted, carefully remove the corn from the oven and let it cool for a few minutes. Using a sharp knife, stand each ear of corn upright and slice downward to remove the kernels, placing them into a mixing bowl.

Add Fresh Herbs: To the bowl of corn kernels, add the fresh lime juice, chopped cilantro, and diced basil. Gently fold all the ingredients together, tasting to adjust seasonings with additional salt or pepper if desired.

Heat the Tortillas: While the corn mixture cools, heat a skillet over medium heat. Lightly toast each corn tortilla for about 30 seconds on each side, until warm and soft, making them easier to fold.

Assemble the Tacos: Take a warmed tortilla and add a generous spoonful of the garlic herb roasted sweet corn mixture to the center. Top each taco with a slice of fresh avocado and, if you’re feeling indulgent, sprinkle crumbled feta cheese on top.

Serve and Enjoy: Offer the tacos with lime wedges on the side, allowing everyone to add a squeeze of lime juice for an added zesty kick.
