8 oz spaghetti

4 cloves garlic, minced

1/4 cup olive oil, divided

1 tsp red pepper flakes (optional)

1 cup cherry tomatoes, halved

1 medium zucchini, sliced into rounds

1 bell pepper (red or yellow), sliced into strips

1 small red onion, thinly sliced

1 tsp dried oregano

1 tsp dried basil

Salt and pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Prepare the Grilled Veggies:

    - Preheat your grill or a grill pan to medium-high heat.

      - In a mixing bowl, combine the sliced zucchini, bell pepper strips, and red onion. Drizzle with 1 tablespoon of olive oil and season generously with dried oregano, salt, and freshly cracked black pepper. Toss until all the vegetables are well-coated.

        - Grill the seasoned vegetables for approximately 4-5 minutes on each side, or until tender and marked with grill lines. Once done, remove from heat and set aside.

          Cook the Spaghetti:

            - While the vegetables are grilling, fill a large pot with water, add a generous pinch of salt, and bring it to a rolling boil. Add the spaghetti and cook according to the package instructions until al dente. Just before draining, reserve about 1/2 cup of the starchy pasta water, then drain the spaghetti in a colander.

              Make the Garlic Herb Sauce:

                - In the same pot used for the pasta, heat the remaining olive oil over medium heat. Add the minced garlic and red pepper flakes (if using). Sauté for about 1-2 minutes, or until fragrant, taking care not to let the garlic burn.

                  Combine Pasta and Sauce:

                    - Return the drained spaghetti to the pot containing the garlic oil. Toss the pasta to ensure it’s evenly coated. If the pasta appears dry, gradually stir in some of the reserved pasta water, one tablespoon at a time, until you achieve a glossy, smooth consistency.

                      Add Grilled Veggies:

                        - Gently fold the grilled vegetables into the spaghetti mixture. Toss everything together until well combined and heated through. Taste and adjust the seasoning with additional salt and pepper, if necessary.

                          Serve:
