Garlic Lemon Broccoli Pasta

8 oz spaghetti or fettuccine pasta

2 cups fresh broccoli florets

4 cloves garlic, finely minced

1/4 cup extra-virgin olive oil

Zest and juice from 1 large lemon

1/2 teaspoon red pepper flakes (optional for a spicy kick)

Salt and black pepper, to taste

1/4 cup grated Parmesan cheese (plus more for serving)

Fresh parsley, chopped for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. About 2 minutes before the pasta is finished cooking, add the broccoli florets to the pot. Drain both the pasta and broccoli, ensuring to reserve about 1 cup of the cooking water for later.

    Sauté Garlic: In a large skillet, heat the extra-virgin olive oil over medium heat. Once the oil is shimmering, add the minced garlic. Sauté for approximately 1-2 minutes, stirring constantly, until the garlic is fragrant but not browned, as burnt garlic can taste bitter.

      Combine Ingredients: To the skillet, add the zest and juice of the lemon along with the red pepper flakes if you opted for some heat. Mix well to incorporate all the flavors.

        Mix in Pasta and Broccoli: Carefully add the drained pasta and broccoli to the skillet.
