Ingredients

4 medium-sized russet potatoes

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon onion powder

1 teaspoon paprika

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Optional: sour cream or Greek yogurt for serving

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to get it nice and hot for baking.

Prepare the Potatoes: Wash the potatoes thoroughly under cold running water to remove any dirt. Pat them dry with a paper towel to ensure they roast properly. Place each potato on a sturdy cutting board. Carefully make deep, evenly spaced cuts about 1/8 inch apart, stopping around 1/4 inch from the bottom so that the potato stays together.

Make the Garlic Butter Mixture: In a medium mixing bowl, combine the melted butter and minced garlic. Then add salt, black pepper, onion powder, and paprika. Whisk the mixture together until everything is well blended, creating a flavorful garlic butter.

Brush the Potatoes: Arrange the prepared potatoes on a baking sheet lined with parchment paper for easy cleanup. Generously brush the garlic butter mixture all over the potatoes, ensuring to get as much of it into the cuts as possible for maximum flavor.

Bake the Potatoes: Place the baking sheet in your preheated oven and bake the potatoes for 40-45 minutes. Keep an eye on them until they become tender and the edges are golden and crispy.

Add the Parmesan Cheese: After 40-45 minutes, carefully remove the potatoes from the oven. Sprinkle the grated Parmesan cheese generously over the tops and into the cuts of each potato. Return them to the oven for an additional 10 minutes, allowing the cheese to melt and become beautifully golden brown.

Garnish: Once they are out of the oven, sprinkle the freshly chopped parsley over the potatoes for a burst of color and freshness.

Serve: Serve these delightful Hasselback potatoes warm from the oven. Pair with a side of sour cream or Greek yogurt for a creamy, tangy dipping option, if desired.
