1 green bell pepper, diced

1 teaspoon smoked paprika

½ teaspoon ground cumin

Salt and pepper, to taste

4 large eggs

Fresh cilantro, chopped (for garnish)

Prepare the Potatoes: In a medium pot, bring salted water to a boil. Add the diced potatoes and cook for 8-10 minutes, or until they are just fork-tender. Drain the potatoes and set them aside in a bowl.

    Sauté the Vegetables: In a large skillet over medium heat, add the olive oil. Once shimmering, add the finely diced onion. Sauté for 2-3 minutes, stirring occasionally, until the onion is translucent. Then, add the minced garlic and cook for an additional minute, or until aromatic.

      Cook Bell Peppers and Chilies: Add the diced red and green bell peppers along with the fresh green chilies into the skillet. Stir and cook for approximately 4-5 minutes, until the peppers have softened.

        Incorporate the Potatoes: Gently fold in the pre-cooked potatoes along with the smoked paprika, ground cumin, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the potatoes develop a crispy and slightly golden exterior.

          Create Wells for the Eggs: Using a spatula, carefully make four wells in the hash mixture. Crack an egg into each well, being careful not to break the yolks.
