Ingredients

2 boneless, skinless chicken breasts

1 cup fresh corn kernels (or canned/frozen if preferred)

4 cups romaine lettuce, chopped

1/2 cup Caesar dressing (store-bought or homemade)

1/4 cup grated Parmesan cheese

1/4 cup croutons

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley for garnish (optional)

Instructions

Prepare the Chicken:

    - Preheat your grill to medium-high heat.

      - Coat the chicken breasts evenly with olive oil. Season them generously with garlic powder, smoked paprika, salt, and pepper.

        - Allow the chicken to marinate for at least 15 minutes to enhance the flavors while you prepare the other ingredients.

          Grill the Chicken:

            - Place the marinated chicken on the heated grill and cook for approximately 6-7 minutes on each side. Use a meat thermometer to check that the internal temperature reaches 165°F (75°C).

              - Once fully cooked, remove the chicken from the grill and let it rest for about 5 minutes to maintain juiciness; then, slice it into strips.

                Grill the Corn:

                  - If using fresh corn, place the ears directly on the grill, cooking them for 10-12 minutes. Turn them occasionally until they are beautifully charred on all sides.

                    - For canned or frozen corn, simply heat it in a skillet with a splash of olive oil until warmed through.

                      - If using fresh corn, let the grilled ears cool slightly before cutting the kernels off the cob.

                        Assemble the Salad:

                          - In a large mixing bowl, combine the chopped romaine lettuce, grilled corn, and sliced chicken.

                            - Drizzle the Caesar dressing over the top and gently toss the ingredients together until all are evenly coated.

                              Finish the Salad:

                                - Top the salad with grated Parmesan cheese and croutons for added texture and flavor. Squeeze fresh lemon juice over the entire salad to elevate the taste profile.

                                  - For a vibrant touch, garnish with chopped fresh parsley, if desired.

                                    Serve:

                                      - Portion the salad into serving bowls, ensuring each contains a balanced mix of chicken, corn, and dressing. Enjoy each delightful bite!
