Grilled Chicken & Peach Skewers

Ingredients
  

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

2 ripe peaches, pitted and cut into wedges

1 red bell pepper, cut into 1-inch pieces

1 small red onion, cut into quarters

1/4 cup olive oil

2 tablespoons honey

2 tablespoons balsamic vinegar

2 teaspoons Dijon mustard

2 teaspoons garlic powder

1 teaspoon dried thyme

Salt and pepper, to taste

8-10 skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

Marinate the Chicken:

    - In a large mixing bowl, combine the olive oil, honey, balsamic vinegar, Dijon mustard, garlic powder, dried thyme, salt, and pepper. Whisk the mixture thoroughly until all ingredients are well blended.

      - Add the cubed chicken to the marinade, and toss gently to ensure each piece is fully coated. Cover the bowl with plastic wrap and place it in the refrigerator to marinate for at least 30 minutes, or up to 2 hours for deeper flavor.

        Prepare the Skewers:

          - After marinating, preheat your grill to medium-high heat.

            - Begin threading the skewers by alternating the marinated chicken, peach wedges, red bell pepper pieces, and red onion quarters. For a visually appealing arrangement, follow this order: chicken, bell pepper, peach, onion, and repeat until the skewer is filled.

              Grill the Skewers:

                - Before placing the skewers on the grill, lightly oil the grill grates to prevent sticking.

                  - Place the assembled skewers on the grill and cook each side for about 4-5 minutes. The chicken should be fully cooked, reaching an internal temperature of 165°F (75°C), and the peaches will have developed a lovely caramelization.

                    Serve:

                      - Once grilled, carefully remove the skewers from the grill and allow them to rest for about a minute. For an added flavor boost, drizzle with additional balsamic vinegar and sprinkle with fresh herbs or a touch more dried thyme before serving.
