Ingredients

For the Grilled Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper, to taste

Juice of 1 lime

For the Peach Salsa:

2 ripe peaches, diced

½ red onion, finely chopped

1 jalapeño, seeded and minced

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Instructions

Marinate the Chicken:

    - In a large mixing bowl, whisk together the olive oil, smoked paprika, garlic powder, onion powder, dried oregano, lime juice, and a generous pinch of salt and pepper.

      - Add the chicken breasts into the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes. For optimal flavor, marinate for up to 2 hours.

        Prepare the Peach Salsa:

          - In a medium bowl, combine the diced peaches, finely chopped red onion, minced jalapeño, chopped cilantro, lime juice, and a sprinkle of salt.

            - Mix gently but thoroughly and let the salsa sit at room temperature for at least 15 minutes to allow the flavors to blend beautifully.

              Preheat the Grill:

                - Preheat your grill to a medium-high heat setting, around 400°F (200°C). To minimize sticking, lightly brush the grill grates with olive oil or use a non-stick grill spray.

                  Grill the Chicken:

                    - Remove the marinated chicken from the refrigerator and place it on the hot grill. Close the lid and grill the chicken for approximately 6-7 minutes per side.

                      - Use a meat thermometer to check that the internal temperature has reached 165°F (75°C) and that the chicken juices run clear.

                        Serve:

                          - Once the chicken is cooked through, transfer it to a serving platter and allow it to rest for a few minutes; this helps to retain its juices.

                            - Just before serving, generously top the chicken with the vibrant peach salsa.

                              Enjoy:

                                - Pair your grilled chicken with delightful sides such as fluffy rice, nutty quinoa, or a refreshing green salad for a complete meal.

                                  Prep Time: 15 minutes | Total Time: 50 minutes | Servings: 4
