Grilled Corn and Avocado Salsa

4 ears of fresh corn, husked

2 ripe avocados, diced into bite-sized pieces

1 medium red onion, finely chopped

1 cup cherry tomatoes, halved

1 jalapeño, seeded and minced (for optional heat)

1/4 cup fresh cilantro, roughly chopped

Juice of 2 limes (about 1/4 cup)

2 tablespoons extra-virgin olive oil

Salt and freshly ground black pepper, to taste

1/2 teaspoon smoked paprika (optional, for additional flavor depth)

Grill the Corn: Preheat your grill to a medium-high heat. Once hot, place the husked corn directly onto the grill grates. Grill for about 8-10 minutes, turning every couple of minutes, until the kernels are nicely charred and tender. After grilling, remove the corn from the grill and allow it to cool slightly.

    Prepare the Ingredients: While the corn cools, prepare the other ingredients. In a large mixing bowl, combine the diced avocados, finely chopped red onion, halved cherry tomatoes, minced jalapeño (if using), and the chopped cilantro. Toss gently to mix.

      Cut the Corn: Once the grilled corn has cooled enough to handle, stand each ear of corn upright and carefully slice the kernels off the cob using a sharp knife. Add the freshly cut corn kernels to the bowl with the avocado and other ingredients.

        Dress the Salsa: In a small bowl, whisk together the lime juice, olive oil, salt, pepper, and smoked paprika (if using) until well combined. Pour this dressing over the salsa mixture in the larger bowl.

          Toss and Serve: Gently toss all the ingredients together until everything is evenly coated in the dressing. Taste and adjust the seasoning with extra salt, pepper, or lime juice as desired. The salsa can be served immediately for a fresh taste or allowed to sit for about 30 minutes to let the flavors meld together beautifully.
