Grilled Corn Salsa Cups

4 ears of fresh corn, husked

1 medium red bell pepper, diced

1 medium red onion, finely chopped

1 jalapeño, seeded and minced (adjust according to desired spice level)

1 cup cherry tomatoes, quartered

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons extra virgin olive oil

Salt and freshly cracked black pepper, to taste

12 small bell pepper cups or mini tortilla bowls (for serving)

Instructions
 

Grill the Corn: Preheat your grill to medium-high heat. Once hot, place the husked corn directly onto the grill grates. Grill for approximately 8-10 minutes, turning occasionally to achieve even charring. You’ll know it’s done when the kernels are visibly charred and tender. Remove the corn from the grill and allow it to cool slightly. Once cool enough to handle, cut the kernels off the cobs and set aside.

    Mix the Salsa: In a large mixing bowl, add the grilled corn kernels, diced red bell pepper, finely chopped red onion, minced jalapeño, and quartered cherry tomatoes. Gently toss all the ingredients together, ensuring they are well combined.

      Dress the Salsa: Drizzle the extra virgin olive oil and freshly squeezed lime juice over the salsa mixture. Add the chopped cilantro and sprinkle in salt and freshly cracked black pepper to taste. Stir well to coat all the ingredients evenly with the dressing.
