4 large whole wheat or spinach tortillas

2 cups romaine lettuce, chopped

½ cup creamy Caesar dressing

½ cup grated Parmesan cheese

¼ cup cherry tomatoes, halved (optional)

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Marinate the Shrimp: In a medium-sized mixing bowl, whisk together the olive oil, lemon juice, garlic powder, smoked paprika, salt, and black pepper. Add the peeled and deveined shrimp to the bowl and toss until they are evenly coated in the marinade. Allow the shrimp to marinate for at least 15 minutes to let the flavors meld together.

    Preheat the Grill: While the shrimp is marinating, preheat your grill to medium-high heat. If you’re using a grill pan on the stovetop, place it over medium-high heat and lightly coat the pan with cooking spray or a small amount of oil to prevent sticking.
