1 medium zucchini, sliced into 1/4 inch rounds

1 medium eggplant, sliced into 1/4 inch rounds

1 red bell pepper, cut into thick strips

1 yellow bell pepper, cut into thick strips

8 oz fresh mozzarella cheese, sliced

1/4 cup balsamic glaze

3 tbsp olive oil

2 cloves garlic, minced

1 tsp dried oregano

1 tsp fresh basil, chopped (plus more for garnish)

Salt and pepper to taste

8 large fresh basil leaves (for layering)

Prepare the Vegetables: Preheat your grill or grill pan over medium-high heat. In a large mixing bowl, combine the sliced zucchini, eggplant, and bell peppers. Drizzle with olive oil, then add the minced garlic, dried oregano, salt, and pepper to taste. Toss everything well until the vegetables are evenly coated with seasoning.
