6 large eggs

1 cup whole milk

1 cup shredded sharp cheddar cheese

1 cup Hatch green chilies, diced (fresh or canned)

1 cup diced cooked potatoes (or frozen hash browns)

1/2 cup diced onion

1/2 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

Fresh cilantro or sliced green onions for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish with cooking spray or a little olive oil to prevent sticking.
