Ingredients

For the Dough:

2 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

¾ cup warm water (about 110°F)

1 tbsp olive oil

1 tsp sugar

½ tsp salt

For the Toppings:

½ cup Hatch green chilies, roasted and diced

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

1 bell pepper (red, yellow, or green), diced

1 cup fresh spinach

4 large eggs

1 cup shredded mozzarella cheese

½ cup crumbled feta cheese

Salt and black pepper to taste

Olive oil for drizzling

Fresh cilantro or chopped green onions for garnish (optional)

Instructions

Prepare the Dough:

    - In a small bowl, mix the warm water, sugar, and yeast. Let this mixture sit for about 5-10 minutes until it becomes frothy, indicating that the yeast is active.

      - In a large mixing bowl, combine the flour and salt. Create a well in the center and pour in the frothy yeast mixture along with the olive oil.

        - Stir until a sticky dough forms. Transfer this dough to a lightly floured surface and knead for about 5-7 minutes until it feels smooth and elastic.

          - Shape the dough into a ball and place it in a greased bowl. Cover it with a clean towel and allow it to rise in a warm area for about 1 hour, or until it has doubled in size.

            Prepare the Toppings:

              - While the dough is rising, prep your vegetables. In a skillet, heat a small amount of olive oil over medium heat, then add the sliced onion, diced bell pepper, and spinach. Sauté for about 5 minutes, or until the veggies are tender. Season them with a pinch of salt and pepper, then set aside.

                Preheat the Oven:

                  - Preheat your oven to 475°F (245°C). If you have a pizza stone, place it inside the oven to heat up as well.

                    Shape the Pizza:

                      - Once the dough has risen, gently punch it down to release the air. Transfer it to a lightly floured surface and roll it out to your desired thickness, approximately ½ inch.

                        - Carefully transfer the rolled-out dough onto a piece of parchment paper, which makes it easy to move to the oven.

                          Assemble the Pizza:

                            - Evenly distribute the sautéed veggie mixture over the pizza crust, leaving a small border around the edge for the crust.

                              - Sprinkle the diced Hatch green chilies and halved cherry tomatoes over the veggies, followed by an even layer of shredded mozzarella cheese.

                                - Create 4 small wells in the cheese and crack an egg into each well. Season the eggs lightly with salt and pepper.

                                  Bake the Pizza:

                                    - Carefully slide the pizza (with the parchment paper) onto the preheated stone or baking sheet. Bake for 12-15 minutes, or until the crust is beautifully golden and the eggs are cooked to your preference.

                                      Finish and Serve:

                                        - Once done baking, remove the pizza from the oven and let it sit for a minute. Sprinkle crumbled feta cheese on top and drizzle with a bit of olive oil for extra flavor.

                                          - Garnish with freshly chopped cilantro or green onions if desired. Slice the pizza into wedges and serve it warm.
