Healthy Greek Chicken Pita Wraps

1 lb (450g) boneless, skinless chicken breasts

2 tablespoons extra-virgin olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

4 whole wheat pita breads

1 cup fresh spinach leaves, roughly chopped

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1/2 cup feta cheese, crumbled

1/2 cup tzatziki sauce (store-bought or homemade)

Fresh lemon wedges, for serving

Instructions
 

Marinate the Chicken: In a medium-sized mixing bowl, whisk together the olive oil, dried oregano, garlic powder, sea salt, and black pepper. Add the chicken breasts, ensuring they are fully coated with the marinade. Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.

    Cook the Chicken: Preheat your grill or grill pan over medium-high heat. Once hot, remove the chicken from the marinade and place it on the grill. Cook the chicken for approximately 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink. After cooking, let the chicken rest for 5 minutes before slicing it into thin strips.

      Prepare the Pita Wraps: While the chicken is resting, warm the whole wheat pita breads. You can do this in a dry skillet over medium heat or microwave them for about 30 seconds. The goal is to make the pitas soft and pliable for wrapping.

        Assemble the Wraps: Take a warm pita and place it on a plate. Spread a generous tablespoon of tzatziki sauce in the center of the pita. Layer on the chopped fresh spinach, diced cucumber, halved cherry tomatoes, thinly sliced red onion, and crumbled feta cheese. Finally, add a portion of the sliced grilled chicken on top.

          Wrap it Up: To wrap the pita, fold both sides of the pita inward over the filling and then roll it up from the bottom, securing the ingredients inside. If needed, use a toothpick to hold it in place. Repeat the wrapping process with the remaining pitas.
