Ingredients

1 lb ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 small onion, finely diced

2 cloves garlic, minced

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon freshly ground black pepper

1 cup beef broth

1 tablespoon olive oil

Optional toppings: shredded cheese, sour cream, fresh cilantro, sliced jalapeños

Instructions

Heat the Olive Oil: In a large pot or Dutch oven, pour in 1 tablespoon of olive oil and warm it over medium-high heat until shimmering.

Cook the Ground Beef: Add the ground beef to the pot. Using a spatula or wooden spoon, break the meat apart and cook, stirring occasionally, until it is nicely browned and fully cooked, about 5-7 minutes. If there's excess fat, drain it carefully.

Sauté the Vegetables: Stir in the finely diced onion and minced garlic into the pot. Sauté these aromatic vegetables for an additional 2-3 minutes, or until the onions become soft and translucent.

Stir in Spices: Add the chili powder, ground cumin, smoked paprika, salt, and black pepper to the pot. Mix well to ensure the beef and onions are evenly coated with the spices, allowing their flavors to bloom.

Add the Beans and Tomatoes: Pour in the drained kidney beans, black beans, and the can of diced tomatoes with their juices. Then, add the beef broth and stir everything together, ensuring a consistent mixture.

Simmer: Bring the chili to a gentle boil, then reduce the heat to low. Let it simmer uncovered for approximately 15-20 minutes, stirring occasionally. This simmering step allows the flavors to meld beautifully.

Adjust Seasoning: Taste the chili and adjust the seasoning as needed, adding more salt or spices to match your preference. Enjoy the rich aroma and flavor profiles as you refine the taste.

Serve: Ladle generous portions of the chili into bowls. Elevate your dish with optional toppings like shredded cheese, a dollop of sour cream, freshly chopped cilantro, or sliced jalapeños for an added kick.
