1 lb (450g) ground beef

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with juices

1 medium onion, diced

3 cloves garlic, minced

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup beef broth

2 tablespoons olive oil

1 bell pepper (your choice of color), diced

Optional toppings: shredded cheese, sour cream, chopped green onions, or fresh cilantro

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Once hot, add the diced onion and sauté for 2-3 minutes until it becomes translucent. Stir in the minced garlic and cubed bell pepper, continuing to sauté for another 1-2 minutes until fragrant and colorful.

    Brown the Beef: Move the vegetables to one side of the pot, creating space for the meat. Add the ground beef to the empty side and cook, breaking it apart with a spatula, until it is browned evenly (about 5-6 minutes). If there’s excess fat in the pot, carefully drain it off.

      Spice It Up: Once the beef is browned, scatter the chili powder, ground cumin, smoked paprika, salt, and black pepper over the meat and vegetables. Stir thoroughly to coat everything with the spices, enhancing the flavors.

        Add the Beans and Tomatoes: Gently pour in the diced tomatoes along with their juices, then add the drained black beans and kidney beans. Mix everything well to combine the ingredients and distribute flavors.
