1 cup green or brown lentils, rinsed and drained

1 large onion, finely chopped

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

1 medium potato, peeled and diced

1 zucchini, diced

1 red bell pepper, chopped

6 cups vegetable broth (or water)

1 can (14 oz) diced tomatoes, undrained

2 teaspoons dried thyme

1 teaspoon ground cumin

1 bay leaf

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

Fresh parsley, finely chopped for garnish

Sauté the Aromatics: In a large pot, warm the olive oil over medium heat. Once hot, add the finely chopped onion and sauté for about 5 minutes, or until the onion becomes translucent. Stir in the minced garlic and cook for an additional minute until you can smell its aroma.

    Add Vegetables: Introduce the diced carrots, celery, and potato to the pot. Cook for approximately 5-7 minutes, stirring occasionally, until the vegetables begin to soften and develop a bit of color.

      Incorporate Lentils: Add the rinsed lentils to the pot, along with the diced zucchini and chopped red bell pepper. Stir thoroughly to ensure that all the ingredients are well distributed throughout the pot.

        Season the Soup: Carefully pour the vegetable broth or water into the pot, then add the undrained canned tomatoes, dried thyme, ground cumin, and the bay leaf. Mix everything together to combine the flavors.
