Hearty Lentil and Vegetable Stew

1 cup dried green or brown lentils, rinsed and drained

2 tablespoons olive oil

1 medium onion, finely diced

2 cloves garlic, minced

2 large carrots, diced

2 celery stalks, diced

1 medium potato, peeled and diced

1 bell pepper (any color), diced

1 can (14.5 oz) diced tomatoes, with their juice

4 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon ground cumin

1 bay leaf

Salt and freshly ground black pepper, to taste

2 cups fresh spinach or kale, chopped

1 tablespoon lemon juice (optional for added brightness)

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Sauté the Vegetables: In a large, heavy-bottomed pot, heat the olive oil over medium heat. Once hot, add the finely diced onion. Sauté for approximately 3-4 minutes until the onion becomes translucent. Introduce the minced garlic to the pot and cook for an additional minute, allowing its aroma to fill the kitchen.

    Add Remaining Vegetables: Incorporate the diced carrots, celery, potato, and bell pepper into the pot. Stir everything together and continue to cook for 5-7 minutes, stirring occasionally, until the vegetables start to soften and develop flavor.

      Combine Lentils and Spices: Carefully add the rinsed lentils, along with the diced tomatoes and their juice, into the pot. Pour in the vegetable broth, then sprinkle in the dried thyme, ground cumin, bay leaf, salt, and freshly ground black pepper. Stir until all the ingredients are well combined.

        Simmer the Stew: Increase the heat to bring the stew to a gentle boil. Once boiling, reduce the heat to low, cover the pot, and allow it to simmer for 30-40 minutes. Stir occasionally, ensuring nothing sticks to the bottom of the pot. Cook until the lentils are tender, and the stew has thickened to your liking. Taste and adjust seasoning with additional salt and pepper if needed.

          Add Greens: With the lentils cooked, fold in the chopped spinach or kale. Let the greens wilt into the stew for about 5 minutes, adding a delightful color and nutrition, then remove the pot from the heat.

            Finish & Serve: For an extra layer of flavor, stir in the lemon juice if desired. Don’t forget to remove the bay leaf before serving. Ladle the hearty stew into warm bowls and garnish with freshly chopped parsley for a pop of color and freshness. Serve alongside crusty bread for a complete meal!
