Ingredients

1 lb ground turkey

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or green), diced

2 cups chicken broth

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon dried oregano

Salt and pepper to taste

1 tablespoon olive oil

Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños

Instructions

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the finely chopped onion and diced bell pepper. Sauté these vegetables for about 5 minutes, or until they are softened and translucent. Next, stir in the minced garlic and cook for an additional 1-2 minutes, or until the garlic becomes fragrant and slightly golden.

Brown the Turkey: Increase the heat to medium-high and add the ground turkey to the pot. Season it generously with salt, pepper, chili powder, ground cumin, smoked paprika, and dried oregano. Using a wooden spoon, break up the turkey as it cooks, stirring frequently until the meat is browned and fully cooked through, which will take about 6-8 minutes.

Add Beans and Tomatoes: To the pot, stir in the drained black beans and the diced tomatoes along with their juices. Pour in the chicken broth, ensuring all ingredients are well combined. Give everything a good stir to incorporate the flavors.

Simmer the Chili: Bring the chili to a gentle boil. Once boiling, reduce the heat to low and cover the pot. Let the chili simmer for about 30 minutes, allowing the different flavors to meld together beautifully. Stir occasionally, and taste for seasoning, adjusting with more salt or spices if needed.

Serve: Ladle the warm chili into bowls, and don’t hesitate to dress it up with your choice of optional toppings. Shredded cheese, a dollop of sour cream, a sprinkle of chopped cilantro, or a few slices of jalapeños can add wonderful flavors and textures.

Enjoy: Serve the chili hot alongside crusty bread or over a bed of rice for a heartier meal. Relish the comforting and flavorful warmth that this hearty chili brings to your table!
