1 cup green or brown lentils, rinsed and drained

2 tablespoons extra virgin olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium carrots, peeled and diced

2 celery stalks, diced

1 bell pepper (red or yellow), chopped into bite-sized pieces

1 zucchini, diced

1 cup diced tomatoes (fresh or canned)

6 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon dried thyme

1 teaspoon smoked paprika

½ teaspoon freshly ground black pepper

1 bay leaf

Salt, to taste

2 cups kale or spinach, chopped

Juice of 1 fresh lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the chopped onion and minced garlic. Sauté for about 4-5 minutes, stirring occasionally, until the onion becomes translucent and fragrant.

    Add the Vegetables: To the pot, add the diced carrots, celery, and chopped bell pepper. Stir well and cook for another 5-7 minutes. The vegetables should start to soften and develop flavor.

      Incorporate Zucchini and Spices: Add the diced zucchini, diced tomatoes, ground cumin, dried thyme, smoked paprika, black pepper, and bay leaf to the pot. Stir everything together and cook for an additional 2-3 minutes, allowing the spices to become aromatic.

        Add Lentils and Broth: Pour in the rinsed lentils along with the vegetable broth. Increase the heat to bring the soup to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for approximately 25-30 minutes, or until the lentils are tender.
