Ingredients

1 lb sirloin steak, cut into 1-inch cubes

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

1 cup fresh parsley, finely chopped

1/2 cup fresh cilantro, finely chopped

1 tablespoon fresh oregano, finely chopped (or 1 teaspoon dried oregano)

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust according to your spice preference)

1/4 cup red wine vinegar

1/2 cup extra virgin olive oil

Juice of 1 lemon, freshly squeezed

Instructions

Prepare the Chimichurri Sauce: In a medium mixing bowl, combine the finely chopped parsley, cilantro, and oregano. Add the minced garlic, red pepper flakes, red wine vinegar, lemon juice, and extra virgin olive oil. Stir vigorously until all ingredients are well blended. Season the chimichurri sauce with salt and freshly ground black pepper to taste. Allow it to rest for at least 10 minutes so that the flavors meld beautifully.

Marinate the Steak: In a separate bowl, add the cubed sirloin steak. Drizzle with 1 tablespoon of olive oil and season generously with salt and black pepper. Toss the steak cubes to ensure they are evenly coated. Let the steak marinate for 15-30 minutes at room temperature to absorb the flavors.

Sear the Steak Bites: Heat a large skillet or grill pan over medium-high heat until hot. Once ready, add the marinated steak bites in a single layer, ensuring they are not overcrowded. Sear the steak for 2-3 minutes on each side for medium-rare, adjusting the cooking time as needed depending on your preferred level of doneness. After cooking, transfer the steak bites to a plate and let them rest for a couple of minutes.

Serve: Arrange the beautifully seared steak bites on a large serving platter. Generously drizzle the chimichurri sauce over the bites, saving some for dipping on the side. For an extra touch, garnish with additional chopped herbs if desired.

Enjoy: Serve the warm chimichurri steak bites alongside your favorite accompaniments, such as crusty artisan bread, grilled seasonal vegetables, or a refreshing salad to complete the meal.
