Ingredients

2 pounds Yukon Gold potatoes, thinly sliced

1 cup heavy cream

1 cup whole milk

2 cups shredded sharp cheddar cheese

3 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon Dijon mustard

1 tablespoon unsalted butter (for greasing the dish)

¼ cup grated Parmesan cheese (for topping)

Fresh parsley (for garnish)

Instructions

Preheat Oven: Start by preheating your oven to 375°F (190°C).

Prepare the Dish: Take a 9x13 inch baking dish and generously grease it with the unsalted butter. Set this dish aside for later use.

Whisk the Base: In a medium-sized mixing bowl, combine the heavy cream, whole milk, minced garlic, finely chopped rosemary, thyme, salt, black pepper, and Dijon mustard. Use a whisk to thoroughly mix all the ingredients until well combined and smooth.

Layer the Potatoes: Begin layering the gratin by arranging half of the thinly sliced potatoes evenly across the bottom of the prepared baking dish. Carefully pour half of the creamy mixture over the potato layer, ensuring it spreads evenly.

Add Cheese: Sprinkle one cup of the shredded sharp cheddar cheese over the potatoes and cream mixture, distributing it evenly for a rich, cheesy component.

Repeat Layers: Now, add the remaining sliced potatoes as another layer on top. Pour the remaining cream mixture over this layer, making sure it covers the potatoes thoroughly. Finish with the remaining cup of shredded cheddar cheese scattered on top.

Add Parmesan Topping: For an extra burst of flavor and a delightful crust, sprinkle the grated Parmesan cheese evenly over the top layer of cheddar.

Bake: Cover the baking dish tightly with aluminum foil and place it in the preheated oven. Bake for 40 minutes. After this initial baking time, carefully remove the foil and continue to bake for an additional 25-30 minutes. You’ll know it’s ready when the top is beautifully golden brown and a fork easily pierces through the potatoes.

Let it Set: Once the gratin is baked to perfection, take it out of the oven and let it sit for about 10 minutes. This resting time will allow the layers to set nicely, making it easier to serve.

Garnish and Serve: Just before serving, sprinkle freshly chopped parsley over the top for a pop of color and freshness. Your delicious Herbed Cheddar Potato Gratin is now ready to be enjoyed!
