Ingredients

1 cup couscous

1 ½ cups vegetable broth or water

2 tablespoons extra virgin olive oil

Zest of 1 medium lemon

Juice of 1 medium lemon

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

1 cup cherry tomatoes, halved

1 small cucumber, diced

1 ripe avocado, sliced

1 cup canned chickpeas, rinsed and drained

¼ cup fresh parsley, finely chopped

¼ cup fresh mint, finely chopped

Crumbled feta cheese (optional)

Microgreens or edible sprouts for garnish (optional)

Instructions

In a medium saucepan, bring the vegetable broth (or water) to a rolling boil over medium-high heat. Sprinkle in the couscous and sea salt, stirring briefly to combine. Once mixed, remove the saucepan from heat and cover it with a lid. Allow the couscous to sit undisturbed for about 5 minutes, letting it absorb the liquid fully.

After 5 minutes, use a fork to fluff the couscous, breaking up any clumps. Incorporate the extra virgin olive oil, lemon zest, lemon juice, freshly ground black pepper, chopped parsley, and chopped mint. Mix carefully to ensure all ingredients are evenly distributed and the flavors meld beautifully.

In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, sliced avocado, and chickpeas. Gently toss these ingredients together to create a colorful salad mixture, being careful not to mash the avocado.

Spoon an even portion of the herbed lemon couscous into serving bowls. Generously top each bowl with the refreshing vegetable and chickpea salad.

For an added layer of flavor, sprinkle crumbled feta cheese over the top, if using. Finish with a garnish of microgreens or edible sprouts for a vibrant touch.

Serve immediately and delight in the bright and refreshing flavors of your Herbed Lemon Couscous Bowls!
