Galettes are a charming and versatile dish that beautifully marries rustic charm with culinary sophistication. Originating from France, these free-form pastries are characterized by their simple yet elegant presentation. Unlike traditional pies, which are confined to a pan, galettes allow for a more relaxed approach to pastry-making. They embrace an artisanal aesthetic, with edges that are folded over the filling, creating a delightful, rustic look that is as pleasing to the eye as it is to the palate.

Ingredients

2 large sweet potatoes, peeled and thinly sliced

1 cup sharp cheddar cheese, shredded

1 tablespoon olive oil

1 teaspoon fresh rosemary, finely chopped

1 teaspoon fresh thyme, finely chopped

1 teaspoon garlic powder

Salt and pepper, to taste

1 pre-made pie crust (or homemade, if preferred)

1 egg, beaten (for egg wash)

Fresh parsley, finely chopped, for garnish

Instructions

Prepare the Sweet Potatoes: Begin by preheating your oven to 400°F (200°C). In a large mixing bowl, combine the thinly sliced sweet potatoes with olive oil, finely chopped rosemary, thyme, garlic powder, salt, and pepper. Toss the slices thoroughly until they are evenly coated with the oil and seasonings. Set aside for the flavors to meld.

Roll Out the Dough: If you’re using a pre-made pie crust, roll it out on a lightly floured surface until it reaches a thickness of about 1/8 inch. For those making their own dough, prepare your homemade crust according to your recipe until it’s ready to be rolled. Once rolled out, cut the dough into four equal circles, each approximately 8 inches in diameter.

Layer the Ingredients: On each dough circle, place a generous layer of the seasoned sweet potato slices in the center, ensuring to leave a 1.5-inch border around the edges. On top of the sweet potatoes, sprinkle a handful of shredded sharp cheddar cheese, ensuring an even distribution.

Fold the Edges: Carefully fold the edges of the dough over the filling. Create gentle pleats as you go, allowing the center to remain exposed to achieve a rustic charm.

Egg Wash: Using a brush, apply the beaten egg to the exposed edges of the galettes. This step is crucial for creating a beautiful golden-brown finish while baking.

Bake: Arrange the assembled galettes on a baking sheet lined with parchment paper. Place them in the preheated oven and bake for 30 to 35 minutes, or until the pastry is golden brown and the sweet potatoes are tender when pierced with a fork.

Garnish and Serve: Once baked, remove the galettes from the oven and allow them to cool for a few minutes. Before serving, sprinkle the surface with freshly chopped parsley for a pop of color. Serve warm or at room temperature for a delightful dish!
