Ingredients

2 cups cooked jasmine rice

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

1/4 cup honey

2 tablespoons chipotle peppers in adobo sauce, minced

2 tablespoons soy sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional, for extra heat)

Salt and pepper to taste

1 cup corn (canned or frozen)

1 cup black beans (canned, rinsed, and drained)

1 avocado, diced

1/2 cup cherry tomatoes, halved

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Marinate the Chicken: In a medium mixing bowl, mix together the honey, minced chipotle peppers, soy sauce, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and black pepper. Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl and let the chicken marinate for at least 30 minutes at room temperature, or up to overnight in the refrigerator for enhanced flavor absorption.

Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the marinated chicken thighs, spreading them out in a single layer. Cook for 5-7 minutes, stirring occasionally, until the chicken is nicely browned and cooked through, reaching an internal temperature of 165°F (75°C).

Prepare the Rice: While the chicken cooks, prepare the jasmine rice according to package instructions. Once done, fluff it with a fork and set it aside to keep warm.

Heat the Veggies: In the same skillet used for the chicken (removing the chicken temporarily if necessary), add the corn and black beans. Stir and cook for about 2-3 minutes, until heated thoroughly.

Assemble the Bowls: To assemble, place a scoop of cooked jasmine rice at the bottom of each serving bowl. Top with a generous portion of the honey chipotle chicken, followed by the warm sautéed corn and black beans.

Add Fresh Toppings: Finish each bowl with diced avocado, halved cherry tomatoes, and a generous sprinkle of fresh cilantro for a vibrant finish.

Serve with Lime: For an additional zing of flavor, include lime wedges on the side of each bowl for squeezing over the top before enjoying.
