1 cup onion, diced

2 cloves garlic, minced

1 cup long-grain rice, rinsed under cold water

2 cups chicken broth

1/4 cup honey

1/4 cup Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon dried thyme

1 cup frozen peas

Fresh parsley, chopped (for garnish)
