Ingredients

For the Honey Garlic Chicken:

1.5 lbs (680g) boneless, skinless chicken thighs, cut into bite-sized pieces

1/4 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tablespoon sesame oil

1 teaspoon fresh ginger, grated

2 tablespoons vegetable oil

Salt and pepper to taste

Chopped green onions, for garnish

Toasted sesame seeds, for garnish

For the Sweet Corn Fritters:

2 cups fresh or frozen sweet corn kernels

1/2 cup all-purpose flour

1/2 cup cornmeal

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika

2 large eggs

1/4 cup milk

1/4 cup chopped fresh cilantro or parsley

Oil for frying

Instructions

Prepare the Honey Garlic Sauce:

    - In a medium mixing bowl, combine honey, soy sauce, minced garlic, sesame oil, and grated ginger. Whisk until well blended and set the bowl aside for the flavors to meld.

      Marinate the Chicken:

        - Season the chicken pieces generously with salt and pepper. Transfer them to the bowl containing the honey garlic sauce, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or ideally up to 2 hours, to allow the flavors to penetrate the chicken.

          Cook the Chicken:

            - In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Once hot, add the marinated chicken to the skillet, reserving the sauce for later. Cook the chicken for approximately 6-8 minutes, stirring occasionally, until it is cooked through and develops a nice golden brown color. Pour the reserved honey garlic sauce over the chicken, bring it to a gentle simmer, and cook for an additional 2-3 minutes, or until the sauce thickens slightly. Remove from heat and garnish with chopped green onions and toasted sesame seeds.

              Make the Corn Fritters:

                - In a large bowl, whisk together flour, cornmeal, baking powder, salt, black pepper, and smoked paprika. In a separate bowl, beat the eggs and add the milk, mixing well. Pour this mixture into the dry ingredients and stir until just combined. Gently fold in the sweet corn kernels and chopped cilantro or parsley to ensure even distribution.

                  Fry the Fritters:

                    - Heat oil in a skillet over medium heat for frying. Once the oil is hot, drop about 2 tablespoons of the corn fritter batter into the skillet for each fritter, flattening them slightly with the back of a spoon. Fry the fritters in batches for 3-4 minutes on each side, or until they are golden brown and crispy. Use a slotted spoon to transfer the cooked fritters to paper towels to drain any excess oil.

                      Serve:

                        - Arrange the honey garlic chicken on a serving platter alongside a generous portion of sweet corn fritters. Serve hot, garnished with extra green onions and sesame seeds if desired, allowing everyone to enjoy the delightful harmony of flavors!
